Laager Rooibos-Infused Recipes to Try This Veganuary

Laager Rooibos provides natural versatility to enhance plant-based meals, from sweet to savoury. To get started, Laager Rooibos brand ambassadors and renowned chefs, Lebo and Tebo Ndala (@withlovefromthetwins) have shared two great recipes to try.

Laager Rooibos Spice Rub Corn Ribs

Ingredients:

  • 1 tbsp chilli flakes
  • 1 tbsp coriander
  • 1 Laager Pure Rooibos teabag (loose leaves)
  • 3 tbsp butter
  • Zest of 1 lemon
  • 3 ears of corn
  • Salt & pepper
  • 1 spring onion, thinly sliced
  • Cream cheese, to serve
  • 2 tbsp toasted pine nuts
  • Lime wedges, to garnish

Method:

1.   Mix butter, chilli, coriander, tea leaves, zest, salt, and pepper.

2.   Cut corn into halves, then halves again lengthwise.

3.   Brush corn with seasoned butter and cook in an air-fryer (15–20 mins) or oven at 180°C              (30–35 mins) until golden.

4.   Serve with cream cheese, sprinkle with spring onion and pine nuts, and drizzle lime juice.

Laager Rooibos Chilli & Rooibos Honey Roasted Butternut

Ingredients:

  • 2 baby or medium butternut halved lengthways
  • ½ tsp cayenne pepper
  • ½ tsp chilli pepper
  • 2 tbsp olive oil
  • Salt & pepper
  • 2 Laager Pure Rooibos teabags
  • ½ cup water
  • ¾ cup castor sugar
  • Fresh parsley to garnish
  • Lime wedges, to serve

Method:

1.   To make Laager Rooibos honey: In a saucepan, boil the teabags and sugar in water until all the sugar dissolves and the liquid is halved. Set aside to cool and slightly thicken. Discard teabags.

2.   Pre-heat oven to 200°C.

3.  Lay the halved butternuts on a prepared baking tray. Score the butternuts with a knife lengthways and sideways to make blocks (don’t slice all the way through).

4.   Drizzle olive oil onto the butternut. Season with the peppers and paprika, and drizzle the Laager Rooibos honey on top

5.   Bake in the oven for 35-40 minutes / until cooked all the way through.

6.   Garnish with parsley and lime and serve.

Restaurants with a good mix of service, food and ambiance

To my mind a great restaurant offers three things – excellent service, great food and a wonderful ambiance.  Of these, service is the most important. 

No matter that the food is delicious and the setting delightful, poor service can ruin the occasion.  However, great service combined with mediocre meal and a plane jane restaurant can still be a pleasant night out.

We’ve eaten in restaurants that are really dirty but with incredible food and couldn’t help but give a rave review.  We’ve also hardly noticed what we ate because the setting was just amazing.

How do you know when you have had a great spa experience?  The answer, of course, is when you doze off on the treatment table.

Ziplining, bungy jumping and shark cage diving are all very safe.  It’s just that our mind tells us we are craaazzzzyyyy to be doing this.
